Our Bologna food tour will take you on a journey aoround old inns (locally named osterie), traditional grocery stores and food shops (the drogherie and historical botteghe), meeting the peolple who have contributed shaping the idea of Bologna’s traditional gastronomy, to discover the tradions and secrets passed over accross generations.

Strolling around the old medieval allyways we will visit the most typical local shops and food laboratories, discovering the secrets of the ancient ways pf preserving pork meat.
We will discover the “kingdom” of Parmigiano Reggiano, his majesty The Cheese, tasting its strong, salty everchanging flavor, and learn about its many qualities.

We will visit a sfoglina’s pasta-workshop and share the secrets of the ancient craft of making fresh pasta. First, we will have the opportunity of watching how, with only a few simple ingredients and plenty of manual skills, these expert ladies make the magic happen.

After, we will get to taste some of the most typical and tasty preparations, in the joyful and warm setting of a centuries’ old trattoria restaurant.

After having stuffed ourselves with plenty of excellent delicacies, it will be time to come across one of the oldest bakeries of the town and grant us a moment of sweetness with a typical dessert that brings to town a bite of local countryside.

And finally, assuming that the chatty patrons will be allowing it, we will have our leisure time tasting a couple of glasses of fine wine sitting inside one of the most authentic osteriea in town. This is the temple of chats, good wine and storytelling, the oldest inn in the centre, where we will admire some queer eclectic decorations and get a real social insight of the city!
