Eggs and flour are usually the base of European food, two simple ingredients but full of magic!
From simple preprations, to stuffed delicacies once prepared only for special events and celebrations,you will take a step in the world of the pasta fresca all’uovo and learn about their many differencies.
Starting from the basis (tortellone or tortellino?), we will tell you the story of the “king” of stuffed pasta and its disputed origin, Bologna or the neighbouring Modena? We will also learn how to recognise similar types of stuffed pasta, like cappelletti, but also lasagne, passatelli, cappellaci and strozzapreti…. The fantasy of local people has created a large variety of recipes. Do you know them all?
Knowing the pasta also means knowing the ingredients: strictly fresh, they vary according to the season, the area, and the occasion.Last, but not the least, is technique: knowhow and local tools are likewise fundamental. This all will be part of our cooking lesson, from the story of pasta, to the right tools and ingredients to choose, techniques to learn and of course, there will be plenty of practice!
