Description
Vignola, a small town located between Modena and Bologna, is an ancient settlement with great traditions and gorgeous architectures. It is a land of castles, including the famous fifteenth-century fortress with breathtaking frescos. This small Emilian jewel was once a land of great wine production (the etymology of the name itself, Vignola, derives from the vineyards that dotted the sweet hills of the area).
In modern times, winery has been enriched by another famous crop, the PGI durone, the sweet, ruby red Vignola cherries, known and exported all over the world. Despite the great success of this cherry, grapes continue to have great importance in the gastronomic tradition of the area as they are not just used to make wine, but also for the black gold of Emilia: the Traditional Balsamic Vinegar from Modena.
Precious and renowned type of dressing, the production of balsamic vinegar is the result of an ancient tradition that has been handed down from generation to generation. In fact, Modena’s traditional basamic vinegar is a family matter: tools and secrets are handed over from father to son, while the precious vinegar barrels once used to represent the dowry of young brides.
