Description


During our journey, you will taste the famous mostarda, italian preserved fruit with a sweet and spicy taste, to be served with boiled meat, sweet-and-sour pasta-pies filled with ragu (bolognaise meat sauce) and, above all, town’s special fresh stuffed pasta (usually Cappellacci) filled with a sweet cream made of pumpkinf and served with salty and tasty meat sauce. A delight for your eyes and your taste buds!

It was 1519 when cook Cristoforo Messisbugo, a forerunner of the modern chefs, was invited to the Estense’s court in Ferrara.As of master of the castle’s kitchens, Messisbugo was always busy with new preparations, creating recipes with local ingredients, directing the layout of impressive feasts, with luxurious food, cutlery and crockery, and more importantly mixing up Italian traditions with European recipes.

Not long after Messisbugo’s times, tasty new ingredients imported form the Americas became popular in the local markets and changed Ferrara’s traditions forever: tasty pumpkins, sweet yellow corn and plushy red tomatoes invaded the tables of the court and bringing new flavours to the Renaissance recipes.

This is why nowadays Ferrara’s traditional food is full of gorgeous preparations, perfectly mixing different tastes, frgrances and styles: something unique even for the Italy.
